Yellow Squash Casserole

This easy casserole can be put together ahead of time (just reserve the cracker mixture for the top so it doesn't get soggy).  You can also use part or all zucchini if desired.

Ingredients
    2 cups sliced yellow squash (about 2 small squash)
    1/4 cup chopped onion
    15 club or ritz crackers, crushed
    1/2 cup shredded Cheddar cheese
    2 Tbl milk
    1/2 teaspoon salt
    ground black pepper to taste

Directions
  1. Preheat oven to 375 degrees F.
  2. Place squash and onion in a large skillet over medium heat. Pour in a small amount of water. Cover and cook until squash is tender, about 5 minutes. Drain well and place in bowl.
  3. In separate bowl, mix together cracker crumbs and cheese. Stir half of the cracker mixture into the cooked squash and onions. Add milk, salt and pepper and stir to combine. 
  4. Spread squash mixture into a 8x8 inch baking dish and sprinkle with remaining cracker mixture.
  5. Bake in preheated oven for 25 minutes, or until lightly browned.
