Ingredients
2 cups sliced yellow squash (about 2 small squash)
1/4 cup chopped onion
15 club or ritz crackers, crushed
1/2 cup shredded Cheddar cheese
2 Tbl milk
1/2 teaspoon salt
ground black pepper to taste
Directions
- Preheat oven to 375 degrees F.
- Place squash and onion in a large skillet over medium heat. Pour in a small amount of water. Cover and cook until squash is tender, about 5 minutes. Drain well and place in bowl.
- In separate bowl, mix together cracker crumbs and cheese. Stir half of the cracker mixture into the cooked squash and onions. Add milk, salt and pepper and stir to combine.
- Spread squash mixture into a 8x8 inch baking dish and sprinkle with remaining cracker mixture.
- Bake in preheated oven for 25 minutes, or until lightly browned.
