Crust:
1/2 c butter, softened
1/4 c powdered sugar
1 c flour
pinch salt
Filling:
8oz cream cheese, softned
1 c sugar
2 eggs, room temp (place in bowl of warm water for a few minutes)
2 Tbl flour
1/4 c fresh lime juice (about 2-3 limes) plus zest
1/4 tsp baking powder
Preheat oven to 350F. Cut butter into dry crust ingredients. Press into greased 8x8 pan and bake 20 minutes. Meanwhile, mix filling ingredients together. Remove crust from oven and pour in filling. Return to oven to bake for additional 25-30 minutes. Cool on counter then transfer to fridge. Let chill a few hours or overnight. Top with additional powdered sugar before serving.
